What am I working on.
It is not often you find a grower of wheat, and they are local. Not only do they grow their own wheat, it is organic. In addition, they mill their own flour. I am talking about Dayspring Farms in Danielsville, GA. There is something special about being able to go see the wheat, meet the owners and pick up a sack of fresh ground flour. If I order it on a Friday, they mill it the following Tuesday. I pick it up on Wednesday. How much fresher can you get.
I have been developing a recipe to use their wheat. It is so much fun to develop a different loaf and to incorporate local, organic wheat in it. Here is a picture I took at their farm recently.
It is hard to believe that there are hundreds of different types of wheat. This is a variety called Rouge de Bordeaux. This was a staple in French baking for the longest time.
I experienced this amazing sourdough bread at the weekend market in Jasper. My immediate response was “This is fantastic bread, and reminds me of German bread back home in Germany”. It is definitely the closest to German bread that I can find anywhere close and far. It also beats the online bread websites, and the additional bread varieties will make it even better. To buy this bread quality right here, making a call to Bert and picking it up locally, makes it very special. Thank you for putting German bread culture and quality on my plate.

It has been so great and amazing to finally have some delicious, local, and fresh sourdough bread.
